Cellar

First of all, a good cellar is a place to enjoy. Looking at the bottles, touching them with your finger tips and finally choosing some of them, before carefully bringing them up to be decanted.

The temperature of a cellar is an essential factor where variations are welcome as long as they are measured and progressive. The cold of the winter doesn’t really bother the bottles if the temperature is above 10°C (50°F) nor does the heat of the summer if the temperature doesn’t exceed 18°C (64°F) for too long. An average temperature of 14°C ( 57°F) is ideal.

The humidity should be high enough to prevent the corks from drying out and therefore prevent wine evaporation, but not too high, because that would damage the labels. A humidity level of around 75 – 80% is generally satisfactory.
